Blood Orange Salad

Blood Orange Salad



  • Endive (2 small heads)

  • Radicchio (1 small head )

  • Savoy Cabbage (1/4 of a large head)

  • Fennel (1 small bulb)

  • Shallot (1 small bulb)

  • Sprouted Sunflower Seeds (3/4 of a cup)

  • Blood Oranges (3 segmented)

  • Dijon Mustard (1 tablespoon)

  • Lemon (2 freshly squeezed)

  • Extra Virgin Olive Oil ( 1/4 cup)

Thinly slice the endive, radicchio, savoy cabbage and fennel.

Add the sprouted sunflower seeds and segment the blood oranges over the contents so the juices drip in as you toss them in.

In a cup whisk together the dijon mustard, lemon, extra virgin olive oil and finely chopped shallots and pour over the salad.

Toss and enjoy!
